The Top 10 Dhosai You have to Try- Classic to Creativity!
- Dhosai (or dosa) is that kind of food that will never be out of fashion. It can be breakfast, dinner, or even a snack, when you want something hot, crispy, and comforting it is always a dhosai. As much as the plain-dosa is loved by everyone, there is world of vides of variations of a dosa- there is flavour and twist in each respective variant.
- I can recall my mornings in my childhood days in Tamil Nadu, when I used to wake up to the smell of the dosas frying out on the iron tawa, which Amma flips without problems. With time I have tried various types of dhosai and they are both traditional and completely unexpected. That is why today, I am telling about 10 varieties of dhosai you should taste, be it a cook or a simple lover of food.Okay, let us begin.
1. Sada Dosa (Plain Dhosai):
- This is the caesar of dosas- the plain, facile one, golden dosa prepared using urad dal and fermented batter of rice. It is normally crunchy and thin, and must be accompanied by coconut chutney and hot sambar. It is light, comforting and can go at any time of the day.
Pro tip:
- The more you ferment the batter, the better and crispier dosa will turn out to be.
2. Masala Dhosai:
- Moving up the ladder, one notch higher than the plain dosa itself, it is stuffed with a tasty potato masala, with its boiled potatoes, onions, mustard seeds, and, curry leaves. It is filling-out and nutritious. Masala dosa and hotel style chutney and sambar in a plate is something difficult to resist!
Ideal to use: On lunch boxes and weekend brunch.
3. Rava Dhosai:
- Rava dosa is unlike the normal dosa batter which is prepared using rava (sooji), rice flour and maida along with spices such as pepper, green chilli and cumin. It comes out very crispy and lacy with small holes on the surface.
- There is no fermentation required! Good anytime, particularly in a busy morning.
4. Onion Dhosai
- It is one of my favorites. It is similar to plain dosa with finely chopped onion, coriander, green chilly (and tomatoes too) sprinkled on it. During the cooking the onions caramelise giving it fantastic sweetness and crunch.
- Tastes best when hot and served with hot spicy tomato chutney.
5. Neer Dhosai (Water Dosa) :
- Crispy plain dosa of Karnataka fashioned using only rice, salt, and a lot of water, and no fermentation is required. It is white, soft and slightly elastic in nature. This goes very well with coconut chutney or a spicy chicken curry in case you like non-veg.
Hint:
- Rice should be soaked and mashed to a smooth batter.
6. Set Dhosai:
- Set dosa is soft, thick, comes in a pair or three pieces, and that is how it got its name. It is spongy and a bit sweet and it is prepared in fermented rice and poha batter. It is a well-known breakfast in Karnataka and Tamil Nadu.
- It can be served with sagu or vegetable kurma.
7. Kids Favourite- Cheese Dhosai:
- This is to all the lovers of cheese especially kids. An ordinary dosa with grated cheese on top coupled occasionally with corn or/and, paneer and even toppings of a pizza! My small niece adores it and terms it as Indian pizza dosa.
- Good idea on childrens tiffin or weekend snack.
8. Pesarattu (Green Moong Dhosai):
- Green moong dal makes a healthy and protein-rich dosa that is typically consumed in the state of Andhra Pradesh. It is satiating and has no need of fermentation. It is also served with upma or with allam (ginger) chutney.
- Ideal diabetic and weight conscious individual.
9. Wheat Dhosai (Godhuma Dosa)
- Wheat dosa is a dosa which is a ready made dosa using the whole wheat flour in place of rice flour, and along with spices. It is kind of rava dosa in consistency yet tastes very healthy with wheat. It is very light on the stomach, is made thinly and a bit chewy.

10. Sweet Twist -Chocolate Dhosai (Sweet Twist!):
- That is right! Chocolate dosa is a sweet form commonly observed in Chennai and Mumbai on the street food stands. There is Nutella or melted chocolate spread on the dosa and occasionally some nuts or bananas are also added.
- Excellent dosa to be served as a dessert to children or any adults with a sweet tooth!
Final Thoughts:
- PPSA In the final analysis however PPSA is a different game altogether.
- As you may see, the humble dhosai is not a single dish, it is the world of tastes and feelings. It can be as soft or as crispy, as spicy or as sweet, and every one will find a dosa to his/her liking.
- Hopefully, my kitchen to yours, I would recommend you to apply these types out and examine which one suits you best. Perhaps, even a combination of two things like a rava cheese dosa or a chocolate-set dosa (perhaps too crazy 😄).
